
Our Production
For several generations, we have been producing an authentic Greek olive oil, from a family estate in the heart of the Peloponnese, in the region of Messenia. This exceptional terroir, rich in sun, wind and minerals, is home to centuries-old olive trees grown without chemical treatment. Every harvest yields a natural, refined Ellada Greek olive oil.

Respect for nature and traditional methods
Our Greek olive oil comes from sustainable farming that respects the environment and biodiversity. We use no pesticides. Production ranges between 8,000 and 12,000 litres a year, which guarantees an artisan approach and rigorous quality control.
Steps in producing our Ellada Greek olive oil
- Hand harvesting The olives are hand-picked at ripeness, then quickly taken to the mill.
- Cleaning and leaf removal The fruit is carefully washed and stripped of leaves to preserve its purity.
- Cold crushing and malaxation Cold extraction is carried out at low temperature to preserve the natural aromas.
- Centrifugation A mechanical process separates the oil from the remaining pulp and liquids.
- Natural settling The oil then rests for several days to reveal its full aromatic richness.
